Begin by making your syrup with 500ml of Earl Grey tea and 500g sugar, gently reduced over a low heat in a saucepan. Cool. When ready, fill a highball with ice, add your Gordon’s and lemon juice and top up with soda. Garnish with a slice of lemon.
Serve in a highball glass.
